La Rosa Náutica understands gastronomy as a responsibility that goes beyond the table. Working with the sea and Peruvian territory means knowing its resources, respecting them, and making decisions that contribute to their conservation.
Through an approach that integrates research, traceability, and collaboration with fishermen, producers, and communities, we seek to create a cuisine that not only interprets products but also contributes to their sustainability.
This commitment is reflected in every ingredient, in every choice, and in the way we understand the future of cuisine.
Responsibility

Resetting the Peruvian sea
"Receteando el Mar Peruano" (Resetting the Peruvian Sea) is La Rosa Náutica's corporate social responsibility, education, and gastronomic culture program, designed to protect Peru's marine biodiversity by connecting haute cuisine with respect for the ecosystem. This program aims to "reset" the dynamics of artisanal fishing, sharing recipes to transform scientific knowledge into a living, accessible, and responsible culinary culture. Each dish tells a story, and "Receteando el mar peruano" seeks to ensure these stories are of respect, with social and environmental awareness.
