Description
The flounder (Paralichthys adspersus) is a coastal flatfish widely appreciated in Southeast Pacific cuisine for its delicate flesh and elegant flavor. It lives on sandy and muddy bottoms, where it remains partially buried, using its extraordinary camouflage ability to protect itself and catch prey.

It is an opportunistic predator that feeds mainly on small fish, crustaceans, and mollusks. Its anatomy, adapted to the seabed —with both eyes located on the same side of the body— allows it to remain motionless while observing its surroundings.

In coastal ecosystems, it plays an important role as a benthic predator, forming part of the trophic balance of bays, estuaries, and shallow areas. Due to its high commercial and gastronomic value, sustainable management is key to conserving its natural populations.

In haute cuisine, it is usually prepared:

  • With beurre noisette
  • Pan-seared with crispy skin
  • Baked with fresh herbs
  • In light stocks and citrus sauces
  • Filleted for contemporary preparations

Its clean and refined profile allows for subtle accompaniments that do not overpower its natural flavor. For this reason, it is frequently found on menus of restaurants specializing in premium seafood cuisine.

From a sustainable perspective, it is recommended to consume specimens that meet the minimum size and come from responsible artisanal fishing.
